A few days ago a I handed Anderson the 'Mrs. Fields Best Cookie Book Ever' cookbook and told him to pick out something to make. I was hoping for chocolate chip cookies.

He wanted something a little more fancy. Mrs. Fields, why do you tempt us so?

There were heart shaped cookies on the left page and the Chocolate Sandwich Cookies on the right page. He said "I want the Chocolate Sandwich Cookies only shaped like hearts."

Your wish is my command.

Here is the recipe for these delicious cookies!

For the Cookies:

1 1/2 sticks (3/4 cup) salted butter, softened
3/4 cup confectioner's sugar
2 tsp vanilla extract
1/4 sup unsweetened cocoa powder
2 tbsp cornstarch
1 cup all-purpose flour

For the filling:

1 stick (1.2 cup) salted butter, softened
1 cup confectioner's sugar
2 tsp vanilla extract
1 tbsp heavy cream

Mix butter, sugar, and vanilla together in 1 bowl until fluffy. In another bowl, combine cocoa, cornstarch and flour. Combine the wet and dry ingredients and mix with a mixer until thoroughly combined.

Roll the dough into a ball with your hands and flatten out. Wrap it in plastic wrap and refrigerate for 1 1/2 hours.

Preheat oven to 325 degrees.

Take dough and roll it with a floured rolling pin and cut out the shapes you want. Place them on an ungreased cookie sheets. I use my Pampered Chef stones. Bake 16 to 18 minutes.

Cool completely before icing.

For the filling, mix butter, sugar, vanilla and cream together until smooth.

Ice one cookie and then make a sandwich! SO EASY! Enjoy!!
