It's been a while since I have done a cooking for guys post. With the colder weather here, I am thinking comfort food, while trying to keep it healthy. Here's my take on chicken pot pie.Here's what you'll need:

  1. Jumbo Biscuits (canned)
  2. boneless chicken breast
  3. frozen peas
  4. frozen corn
  5. frozen potato, peppers, green beans
  6. jar of chicken gravy
  7. onion

Feel free to add carrots or any other vegetables that you like.

Cut the chicken breast into cubes and cook on the stove top with sliced onions.

While the chicken is cooking, preheat the oven to 375 and cook the biscuits (11 minutes, flip after 7 minutes)

While the chicken and biscuits are cooking, microwave the veggies.

When the veggies are done, mix in with the chicken and onions and pour in the jar of gravy, let it heat for a few more minutes.

Once the biscuits are done, cover with the chicken filling and enjoy!
