With the cooler weather settling into northern New England, nothing quite hits the spots like a homemade soup. Here's the cooking for guys' version of homemade soup. Basically if you can boil water, open a can and cut an onion and sausage, you can make this minestrone soup.

Here's what you'll need:

  • A large pot to make the soup
  • 7 cups of water
  • Minestrone soup mix
  • 14.5 ounce can of diced tomatoes
  • small onion
  • turkey Italian sausage
  • grated cheese or shredded cheese

Add 7 cups of water in your large pot and turn the stovetop to high. As the water is heating up, chop your onion and dice up your Italian sausage and set aside. Also, open the can of diced tomatoes.

Once the water is at boil, add the soup mix and diced tomatoes and reduce heat so it simmers. Set the stove timer to 20 minutes. Add the sausage with 15 minutes left to cook and the onions with 10 minutes left. Feel free to add other fresh vegetables that you might like in the soup.

Once the soup is done, let it sit at least 15 minutes before ladling into your soup bowl.

Top with grated or shredded cheese and enjoy.

It's hearty and warm and low fat and healthy!
