I love this season.  I'm a sucker for everything pumpkin.  So are my children.  And, pumpkin is so good for you (perhaps, all the sugar and oil you add to recipes isn't...but they are still getting the pumpkin, right.  They're kids.  Give them the sugar!  In moderation, of course)

OK, so one of the easiest and quickest recipes I make for my kids and they will devour when they get home from school is a pumpkin dip.  Simple, really.  Take a can of pumpkin, a small package of vanilla pudding mix and a container of cool whip.  Put the canned pumpkin in a bowl and add the pudding mix (without adding milk, just the powder).  Once that's blended, mix in the container of cool whip.  DONE!

You can use graham crackers, nilla wafers or whatever you'd like to dunk into the dip and eat it.  My kids really like to go for the gold and spread it on top of a slice of pumpkin bread.
