I have a tendency to pick way more apples than what we actually need.  I love apple picking so much on a nice autumn day, I will go many times during the season.  Leaving me with even more apples.  

When I have extra apples, I quickly make a batch of applesauce.  It really is the easiest thing, next to eating an apple plain, to do with apples.  Let me share my recipe with you:

Applesauce

Recipes usually call for 8 or 12 apples...but who are we kidding, that will give us, maybe, 2 cups of applesauce.  So I peel and cut into small pieces as many apples it takes to fill my slow cooker a little over half way.  Use a variety of apples (mixture of tart and sweet)

Add enough water to come half to three quarters of the way up the apples, you don't want too much water.  Add 1/2 cup of white sugar and 3 tsps of cinnamon.

Heat on low for 4-6 hours.

When apples are soft, mash with a potato masher.  Stir.  Taste it, if it's not sweet enough, add more sugar.  If you want more of a cinnamon taste, add more.  Applesauce is fool proof.

If you'd like to get this done quicker, just cook it on the stove at a low boil.  Boil until apples are tender.
