I love this time of year when fresh vegetables are everywhere. My husband has planted a good-sized garden this year, and we're currently harvesting cucumbers and summer squash. We knew we wanted a lot of cukes, but I think he underestimated the amount we'd actually see. Now, I'm asking everyone if they need any cucumbers.

That will be happening soon with zucchinis, and they'll be everywhere, including at your office. It seems everyone who plants zucchini ends up with more of them than they can use, so they ask everyone they know, 'Do you need any zucchini?' If you've ever turned them down, think twice before doing it again.

I know they're usually huge and awkward to store. And not everyone likes sauteed zucchini as a side dish. But zucchini is such an incredibly versatile vegetable, that can be used in everything from breakfast dishes to baked goods. I did a little research among my family and friends and was amazed at how many ideas they came up with. I put together a list but didn't link out to any recipes, so you'll have to Google them yourself. (Siri, how do you make zucchini bread?)  You'll want to have zucchini in your pantry year-round. And you probably know plenty of people who can help you get one or two...or five.
