Phew.  The amount of sleep I was losing over this.  The Lobster emoji was picked, along with 150 other emojis, to be released by a group knows as the Unicode Cosortium.  The lobster was originally displayed with only 8 legs.

According to WMTW:
The Unicode Cosortium is group oversees emojis that are then shared on iPhones and other devices. Developers can decide how each emoji looks on their platforms.

Everybody knows...a lobster has 10 legs and Senator Angus King pointed that out to the group.  King, who has a love for lobsters, has been the driving force behind this emoji.
