It might be an unfair sterotype, but men aren't known for their cooking. I try to cook often, breakfast everyday and dinner more often than not. I look for simple, quick things to make that are also a good value and somewhat healthy.

With the cooler weather starting to settle in, I'd like to share a minestrone soup that I might quite often this time of year.

It's really easy and takes less than 30 minutes. I use a soup mix, a can of diced tomatoes, 7 cups of water and I like to add chicken sausage. Bring the water to boil and add the soup mix, the can of diced tomatoes and the chucks of chicken sausage. Reduce the heat to a simmer and set the timer for 20 minutes.

You might want to add onions, green beans, or any other fresh veggies.  I let the soup cool for at least 15 minutes before serving. It makes a hearty, tasty soup that serves up to 6. The soup mix, diced tomatoes and chicken sausage will cost you around $7 dollars. That makes this a great value of just over a dollar a bowl!
