A New Brunswick Spot Worth the Hype

Brunswick has a new Italian restaurant that's already earning a spot on my list of favorites. Paolos, the sister restaurant to Dutchman's, has transformed the former Frontier space into a warm, inviting spot overlooking the Androscoggin River. According to Main Street Maine, the restaurant brings Italian-inspired dishes, handcrafted cocktails, and a welcoming atmosphere to downtown Brunswick.

Wood-Fired Pizza That Delivers

The wood-fired pizza is the star of the menu. The crust has that perfect balance of crispy and chewy with just the right amount of char from the oven, while the fresh toppings let every bite shine. If you're craving pasta, you're in good hands too. Every dish feels thoughtfully prepared, making it the kind of place you'll want to return to just to work your way through the menu.

Don't Skip the Cocktails

As good as the food is, the cocktails deserve just as much attention. The House Panther, is a tiki-inspired cocktail inspired by the restaurant's unofficial feline mascot. With layers of tropical citrus, warm spice, and carefully selected spirits, it's playful, bold, and surprisingly balanced. It pairs perfectly with a wood-fired pizza and sets the tone for a relaxed night out.

Between the incredible cocktails, authentic Italian flavors, and beautiful river views, Paolos is already making its mark on Brunswick's dining scene.
