Since the start of the pandemic, it seems everyone is trying to adapt to the new normals of life, and that's not been the easiest. But business owners are struggling with all that while continuing to follow all CDC guidelines and recommendations, keeping capacity limits in check, customers safe, and staying afloat.

For some, it's been easier to expand with an extra outdoor dining area, while others work in high traffic or even small areas, don't have that, and have made it nearly impossible. Due to the lack of space vs. volume limit, many restaurants in downtown Waterville have requested outdoor dining licenses.

According to Centralmaine.com, the Waterville City Council has approved 4 downtown businesses with outdoor dining expansions and licensing for 2021. This will give certain restaurants, such as Amici's Cucina, 20 Below, Opa, 18 Below, and the ability to use sidewalks and parking spots as dining areas.
